I have a suggestion - a good fixie ride would be this, leaving the Wallsend/Link Rd roundabout:

1.  Head up the Link Rd to the Minmi roundabout - turn left and head down to West Wallsend.

2.  Travel down the main street of West Wallsend, turn right to head to the High School - continue down the hill.

3.  Hard left at the roundabout, head through Barnsley. 

4. Turn right to head over the weir, then through to Teralba - pedestrian underpass under 5 Islands Rd, then around through Speers Point and Warners Bay until Warners Bay Rd. 

5.  Head up Warners Bay Rd until turn off to Wilsons Rd, head down past shopping centre, then follow that to the elft until it becomes South St, then follow that through Windale (yikes!) until the Pacific Hwy.

6.  Turn right, and head up the JEwells Hill, turning right (LEFT) to enter Jewells.  Follow Niabia (NTABA) Rd through to Wommara Rd (where there is a right tuer), then follow that through to the roundabout where you turn right (LEFT)  in to Railway Cres, then go up through Redhead until you get on to the Fernleigh Track.  Follow the Fernleigh Track the the end.  Make you way back to the Wallsend roundabout by following the flatish course through Lambton and the Jesmond cycleway.

Not too many hills at all, and those that are there I have managed easily on my fixie running an 88" gear.  Those with less than an 88" would find the hills a bit easier.

have made a couple of adjustments for accuracy sake here Metro. Do you have trouble finding your way some times?
